Hello y'All,
I am no fan of tankless water heaters for reasons discussed on this
thread recently.
A better solution is to use a boiler and tank, not cheap but good.
The best in a very crowded marketplace is the Munchkin.

I recommend the VWH model for water heating. It has an onboard pump and
controls.
There is a 24VAC transformer which will present a 24-7 load, small but
possibly significant for an off grid system. I suppose you could isolate
it with a digital time clock to lock it out during off demand hours.
The Munchkin is designed to circulate to a tank from which the hot water
is drawn.
Use any tank size appropriate to the demand. ASME certification required
for tanks larger than 250 gallons. I have used stainless foam insulated
tanks and electric water heaters as a tank. An aquastat at the tank
operates the boiler.
Hard water will sludge the tank, I recommend using a descaler.
