Replacing the 50A breaker with a backfed solar breaker would work if your
relocate that load (which may require load calcs to reconfigure the service
disconnects, which is what you would be doing).

You are just limited to the rating of the service on the solar
interconnection, so 125 / 1.25 = 100A would be your max inverter output
rating.
