I have found reasonable data on some of the commercial kitchen appliances from manufacturers' data sheets. We have then applied duty cycles to those (along with occupancy numbers and banquet loads) to try and guesstimate the demand.
On the thermal side, a decent array of commercial dishwasher data and guest room use figures are available in software packages provided by the commercial water heater manufacturers. (e.g. Rheem's CertiSpec3.) My ME advises me to halve their numbers as a starting point (they are in the business of selling heaters...)
