We are remodeling a 1938 hotel in New Mexico and have been able to project some rather impressive savings by carefully managing and moving heat.  e.g. Specify all of the kitchen and bar refrigeration for remote compressors, then feed these plus all of the walk-ins (including the wine cellar) from a custom rack system with water-cooled condensers.  This removes heat and noise from the kitchen, dramatically lowers both the energy load and the maintenance requirements on the kitchen units, and 
provides hot water.  Oh, and the walk-ins are all located in an unheated portion of the basement.

Very interested in what adsorption chillers you have used - I have been working with a team that has installed several of the large Japanese units and is working with some other players considering entry to the US market.
