thermal system data monitoring [RE-wrenches]

Thermal wrenches,
A customer (architect-builder) is determined to do an annualized heat
storage system, using soil to store excess summer heat beyond what can be
stored in a tank. He's installing PEX in compacted layers in the ground soon
and wants to monitor soil temps all through the stratum and on both sides of
the insulated exterior boundaries.

Any suggestions on how to do this, what type thermal sensors and conductors
to use, who to ask, etc?
