Ungrounded systems are allowed, but only if you put disconnects in all
ungrounded conductors.  Since this instantly doubles the number of
fuses/breakers required, this exception is rarely used.

However, in my previous employment in the field I often used a two pole
disconnect on PV direct water pumping systems, as it is really hard to find
single pole disconnects.  This allowed me to float the negative legally, and
possibly help with surge protection.

Since we carried red, white and black USE-2 on the service truck, I did like
Todd and used white and red for grounded systems and red and black for
floating systems.  Helps eliminate the OOPS factor.
