HI all
the Hobo data logger can do what you want for $199
PLUS the cost of signal conditioners and transducers. 
The signal transducers cost about the same as the
HOBO.  The hobo runs on its own battery and can log
for about a year, has four chanels.  The hobo does the
data logging and you down load using a serial port
when you want to.  

There is a lower cost version that is $110 but has
less features and less memory, if you use shunts, you
must come up with an amplifier for the millivolts to
the 2.5 for the data logger.  I have used hobo's and
find them to be reliable and easy to use.
