Jeremy,
In the Northeast SDHW does more like 60-70% of annual needs. Depending on
how well the system is sized and of course shading issues.
The most accurate way to find payback is to perform the same type of "load
analysis" you would do with a PV system. Find out exactly how much hot
water is used on a weekly basis. Then you can figure out how many BTU's you
need per day. From there it is a matter of how scientific you want to get.
As Gator Tom has said before, there are rules of thumb for how much hot
water you can expect a typical 4x8 collector to heat in different parts of
the country.
Or you can assume a standard setting of 120 and figure out the BTU's
necessary to reach that temperature. How many collectors will it take with
your local weather to produce enough BTU's to heat the water. How much oil,
propane or elec. will it take to do the same. All types of fuel units, i.e.
kWh can be converted to BTU's. Don't forget to include heating efficiencies
for both solar and the different fossil fuels. Then you can figure out the
5,10 or 20 year cost of using their current heating source versus the cost
of the SHOW system.
This is a summary, but hopefully it will help move you in the right
direction.

Does anyone out there have any comments on figuring payback for a solar DHW
system? I usually tell clients that it will supply 80% of their hot water
needs.
Thanks
