Maybe its New Mexico, but I've seen rodent chewed wire a few of times:
UF10-2 & NMB12-2 down to the copper. No USE so far, but the poison on that
stuff is unbeleivable. I had to store an exceptionally fresh roll outside
for a couple of months because the smell was making everybody in the shop
nauseous.
As for quick connects, Entech has used 600 VDC quick connects for decades
module to module in its concentrator arrays. These are interesting because
the modules tilt and roll for the 2 axis tracking. Each module rolls
independently, so the quick connects get a daily work out. The UL listed
single pole quick connects twist lock, and even John Wiles didn't poo poo
their use at Sandia. I'd say a stationary roof mount using quick connects
is not going to give you problems. They actually get pretty hard to open
after a few years, I'd quit calling them "quick".
Also, I think Outback would draw an arc longer than 3 inches if they upped
the amperage: high voltage DC is amazing.
