desalination [RE-wrenches]

This is not your typical wrench question. We're working on a job in Baha, 
and the client has asked us to look into solar desalination plants. I know 
such a thing exists, and can be fairly simple, but he's looking for a 
decent amount of water (pool, jacuzzi, caretaker, lots of guests when they 
are there.). I'm sure we can do some storage to even the flow, but the flow 
seems like it will be pretty high.

Can anyone point me in a direction to start?
